Angel Hair Pasta with Crab

Serves 4

Tips – Fresh crab meat is preferable to tin, however, it can be costly or messy if you’re shelling them whole. You can substitute the crab meat for butterflied prawns or chicken.

Ingredients:
  • 350g angel hair pasta
  • 30ml olive oil
  • 1 tomato, seeds removed and diced
  • ½ – 1 red chilli, chopped
  • 2 – 3 garlic cloves, peeled and crushed
  • 200g crab meat
  • ¼ cup low fat cooking cream (adapt amount according to taste)
  • 1 tablespoon basil, chopped
  • sea salt and freshly ground black pepper, to taste
Method:
  1. Cook the angel hair pasta, following the packet instructions.
  2. Heat the olive oil in a large pan. Sauté tomato, chilli, and garlic, until the tomato is just soft, then add a little crab meat and cream to make a sauce.
  3. Keep adding the crab meat and cream until you have a consistency that you like.
  4. Add basil and toss through the drained pasta.
  5. Season with salt and pepper.
