Baked Beans with a Twist

Personal Notes – Ok, you’re in a rush, you need a feed, but you don’t have much in and you don’t want just boring old soup or beans out of the can. This is a quick and simple way to jazz up plain old boring ‘Baked Beans on Toast’. One day I was simply trying to use left overs to pimp my beans and came up with this.

Tips – As a delicious alternative to toast and butter, use Ciabatta bread. Mix together some garlic paste and olive oil. Grill the Ciabatta and whilst the Ciabatta is grilling, brush on the oil and garlic mix so it runs and drizzles through all the Ciabatta crevasses.

Ingredients:
  • 420g canned baked beans (preferably use British version)
  • ½ red onion, finely diced
  • ½ avocado, sliced
  • shaved parmesan, for serving
  • black pepper, for seasoning
  • Worcestershire sauce (optional)
  • 4 slices bread, toasted
Method:
  1. In a pan, lightly fry the red onion and then mix through the baked beans and heat to the desired temperature.
  2. Meanwhile, toast bread and then butter placing on plates ready for plating up.
  3. Spoon heated baked bean mix over your toast and place avocado in a nice fan shape on top.
  4. Top with parmesan cheese and season with black pepper if desired.
  5. As an extra boost, you can also drip a few drops of Worcestershire sauce around the plate or bowl.
