Chicken Adobo

Personal Notes – It’s a traditional Filipino dish from my mum’s country, which my sister and I grew up on. It’s my favourite dish because it’s quick and tasty.

Cooking 20 Minutes

Tips – Can also be served with fresh cucumber salad.

Chicken Adobo
Ingredients:
  • 1kg chicken breast, cut into 2cm pieces
  • 2/3 cup soy sauce
  • 2 teaspoons garlic, minced
  • 2 teaspoons olive oil
  • 2 bay leaves
  • 1 teaspoon whole peppercorns, to taste
  • ½ cup white vinegar
  • salt, to season
Method:
  1. Place chicken, soy sauce and garlic into a bowl to marinate for 30 minutes.
  2. Heat olive oil into pan put in the chicken pieces.
  3. Add the bay leaf and peppercorns and keep on low heat until chicken is cooked
  4. Add vinegar and simmer for 5 to 10 minutes to form a sauce.
  5. Serve hot with rice.
