HOMEMADE BAKED MEATBALLS

Yield: Makes 24.

Easy, Make-Ahead, Freezer-Friendly.

Can be combined with your favourite pasta sauce, in a sandwich, or serve them with a tangy dipping sauce for a crowd-pleasing appetizer.

Ingredients:
  • 1/2 kg lean ground beef
  • 1/2 cup finely chopped onion
  • 2 1/2 tbsp fresh lemon juice
  • 2 tbsp Dijon mustard
  • 1 tsp finely chopped garlic
  • 1 tsp grated lemon peel
  • 1/2 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
Method:
  1. Preheat oven to 200°C.
  2. Combine all ingredients in a bowl. Shape mixture into 3 1/2 cm balls. Place balls in a nonstick foil-lined rimmed baking sheet.
  3. Bake until completely cooked, about 25 – 30 minutes. Cooked meatballs may be frozen for up to 2 months.
