Homemade Ice-Cream Sandwich

Personal Notes – My mum has been making this for as long as I can remember. It was always a special sweet treat that my sisters and brother enjoyed on a hot Christmas afternoon.

Tips – Make sure that the top biscuits are layout in the same direction as the bottom biscuits. Instead of Malteasers use different chocolate like flake, peppermint or honeycomb crushed into pieces.

Ingredients:
  • 600ml cream
  • 400g sweetened condensed milk
  • 1 packet Malteasers, halved or crushed
  • 2 packets malt biscuits
Method:
  1. Line a large rectangle dish with baking paper.
  2. Whip cream until thick, and whip through the condensed milk. Fold through malteasers.
  3. Layer biscuits on the bottom of a dish, pour in cream mixture and top with another layer of biscuits.
  4. Put in freezer to set overnight. Cut into sections and serve.
