Leche Asada

Personal Notes – “Leche Asada” is one of the tastiest Chilean desserts and is characterised by its simple preparation and few ingredients which makes it very homey and reminds you of your childhood. I never tried this dessert until I baked it myself for a Chilean night. That was the time my Latin American friends tried it and said “Oh! This tastes like home!”

Tips – Let the mixture bake with lower heat and longer time so the dessert doesn’t smell like egg. If the Leche Asada is taking longer to cook, place in a bain-marie in the oven (a water bath with a tea towel underneath the baking dish).

Ingredients:
  • 1 litre full cream milk
  • 5 eggs
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 cup sugar
  • ½ cup water
  • Orange rind, grated
Method:
  1. Preheat oven to 170 degrees Celsius.
  2. Grate pieces of orange peel ensuring the pith is removed.
  3. Mix together milk, eggs, 2 tablespoons of sugar and vanilla in a bowl.
  4. In a sauce pan over low heat, stir 1 cup of sugar with the orange peel until the sugar melts.
  5. Add 2 tablespoons of water to the sugar and keep stirring until it thickens. Once the caramel has become entirely liquid remove from heat. The caramel should be soft and flexible.
  6. In a baking dish, pour in the caramel mixture and then pour the milk mixture on top.
  7. Bake the mix for about 45 minutes (check while it is in the oven) until it is relatively firm and golden on top.
  8. Remove and let to cool down then refrigerate for few hours before serving.
