Ingredients:
- 60g caster sugar
- 60g butter
- 90ml peach juice
- 50ml orange juice
- 4 peach halves
- 20ml peach liqueur or apricot liqueur (for flavour)
- 15ml Southern Comfort (for flaming)
- 50g toasted almond flakes
- 2 scoops vanilla ice-cream
- 100ml fresh cream
Method:
- Heat pan over flame.
- Add sugar to pan and allow to commence caramelisation.
- Add butter to pan and mix with sugar.
- Add half the peach juice and half the orange juice. Stir juices to mix a consistent sauce with sugar and butter.
- Add peach halves to pan, turn peach halves and continue to stir sauce.
- Add peach liqueur to sauce, check consistency of sauce by adding more juice.
- Continue to stir sauce and turn peaches to ensure they have heated through properly and have a coating of sauce.
- Tilt pan back and heat front edge in preparation of adding the Southern Comfort.
- Add Southern Comfort and flambé.
- Turn down the heat, remove peach halves from the pan and place on a serving dish (that has been warmed).
- Drizzle peach halves with some of the sauce from the pan. Top with toasted almond flakes.
- Add ice cream scoop (just before serving) and cream if requested.
