Success ‘Sukse Kake’ Cake

Serves 10 – 12

Cooking Time 20 – 30 minutes

Personal Note -A traditional Norwegian recipe and a family favourite, only consists of a few ingredients and can never go wrong. My Mormor (Mum’s Mum) used to make it before she passed away. She passed the recipe onto my Mum who has now passed it onto me.

Tips – Let both components of the cake completely cool before adding margarine and icing the cake.

Ingredients:
  • 5 egg whites
  • 200g almond meal
  • 250g icing sugar

Icing

  • 5 egg yolks
  • 125g sugar
  • 100ml thickened cream
  • vanilla essence
  • 150g margarine
  • chocolate, grated, to serve (optional)
Method:
  1. Preheat oven to 175 degrees Celsius.
  2. Line the bottom of spring form cake tin with baking paper and spray lightly with baking spray.
  3. Beat egg whites stiff until it forms peaks.
  4. Mix together the almond meal and icing sugar and fold into the egg whites.
  5. Bake in the oven on the middle rack for 20 to 30 mins until golden. Allow to cool before icing.
  6. To prepare icing, mix egg yolks, sugar, thickened cream and vanilla essence in a pot over low heat, stirring consistently until it thickens and just at boiling.
  7. Remove from heat and allow to cool before stirring in the margarine.
  8. Cover cake with icing and top with grated chocolate (optional).
