Ingredients:
- 5 egg whites
- 200g almond meal
- 250g icing sugar
Icing
- 5 egg yolks
- 125g sugar
- 100ml thickened cream
- vanilla essence
- 150g margarine
- chocolate, grated, to serve (optional)
Method:
- Preheat oven to 175 degrees Celsius.
- Line the bottom of spring form cake tin with baking paper and spray lightly with baking spray.
- Beat egg whites stiff until it forms peaks.
- Mix together the almond meal and icing sugar and fold into the egg whites.
- Bake in the oven on the middle rack for 20 to 30 mins until golden. Allow to cool before icing.
- To prepare icing, mix egg yolks, sugar, thickened cream and vanilla essence in a pot over low heat, stirring consistently until it thickens and just at boiling.
- Remove from heat and allow to cool before stirring in the margarine.
- Cover cake with icing and top with grated chocolate (optional).
