Tasty BBQ Marinade Recipe

We all love a BBQ with friends and family, and you don’t need to be a chef to offer more than sausages on the barbie; the secret is simple – a tasty BBQ marinade. 

Making a tasty BBQ marinade is simple if you follow the basic rules. Read on to learn more.

Basic rules of marinating

  • Prepare your meat (fish, prawns, halloumi, field mushrooms, cauliflower, or plant-based meat) into appropriate sizes. You can cut it into thin fillets to grill on the BBQ or into chunks you can thread onto skewers.
  • Cover in a delicious marinade
  • Let them sit and soak up all that flavour before cooking.

How to make a marinade

You’re off to a great start if you have olive oil, lemon juice, garlic, salt and pepper, and some herbs. These ingredients form the base of many marinades, so this will do if you’re missing any more exotic spices.

Marinade your main ingredient

Once you’ve made your marinade, make room in your fridge so you can let the marinade work its magic. Generally, the longer you leave your food in the marinade, the more flavour it will reserve. Overnight is best, but even 30 minutes can work if you are pressed for time.

Once the meat or veggies are marinated, take them to your gas BBQ.

Our favourite BBQ marinade recipe

We can’t go past this delicious BBQ marinade for meat, chicken, fish, and vegetables. This kid-friendly marinade will have everyone licking their fingers asking for a second helping.

Recipe:

  • 2/3 cup tomato sauce/ketchup
  • 1 tablespoon light brown sugar 
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 clove garlic, grated
  • Salt and freshly ground black pepper

Optional: 1 teaspoon of chili flakes (if you like spicy food).

Method:

  1. Combine the tomato sauce, sugar, vinegar, Worcestershire, cumin, paprika, garlic, 1/2 teaspoon salt, and a few turns of pepper in a large resealable plastic bag.
  2. Add meat or vegetable of choice, squeeze out the air, seal tightly and massage gently to coat the contents with marinade. 
  3. Refrigerate for 2 hours or overnight.

This marinade is suitable for freezing; defrost in the refrigerator overnight before using.

Cooking:

Remove the meat, chicken, or vegetables from the bag and grill over indirect heat, covered, until cooked through, then uncover and cook until lightly charred.

Serve with a crisp green salad and fresh bread rolls.
